100g of Quinoa
400g of Mashed Banana
1 tsp of Vanilla Extract
150g of Oat Flour
1 tbsp of Coconut Oil (melted)
30g of Unsweetened Brown Rice Puffs
1/4 tsp of Cinnamon
2 tbsp of Cocoa Powder
65g of Pecans (roughly chopped)
Cook the quinoa, then toast on a baking tray in the oven. Make sure to toss the quinoa around every 5 minutes. Toast until crispy then set aside to cool.
Mash banana, add the vanilla extract and mix.
Grind down the Oats in a blender and add 150g into the mashed banana.
Add in the rest of the ingredients along with 100g of the toasted quinoa and mix well.
Line a baking tray and add the mixture. Bake for 25 minutes.
Allow to cool, cut into slices and drizzle with some dark chocolate.
