Protein Gingerbread Cookies

A festive treat from @The Nutritionista with Protein Gingerbread Cookies!

Ingredients

1 large egg

90g of melted coconut oil

90g of honey

1 tsp of vanilla extract

1 tsp of ground ginger

1 tsp of cinnamon

1 tsp of nutmeg

300g almond flour

60g of Kinetica Vanilla Whey Protein

Method

Whisk the egg in a bowl then add the melted coconut oil and honey and mix

Add the vanilla extract, ginger, nutmeg and cinnamon and mix again

Finally add the almond flour and the vanilla whey protein powder and mix until it forms a dough

Roll out the dough mixture on some coconut flour so it doesn’t stick then cut out Christmas themed shapes

Place cookies on a baking tray and place into the over at 170 degrees for 10-12 minutes until golden brown in colour

Leave to cool before decorating. I added dark chocolate & coconut to mine
